A must-try for anyone who appreciates quality Chablis, this has lovely purity of aromas and is evocative of Champagne: baked apples, fresh yeast, greengage and lime. On the palate, it is soft-textured, freshened by crisp acidity. There are wafts of apple blossom, vanilla pod and homemade bread fresh out of the oven. Try with oysters, baked cod, mild cheeses or creamy mushroom dishes. Made from two native yet rare varieties - Tempranillo Blanco and Maturana Blanco - grown at Rioja's north-easternmost limit on a plateau at 450m elevation. The extreme climate with Atlantic influence makes for a cool, extended growing season: this is one of the last places in the region to be harvested.
