Description
The Réserve des Célestins is only made in vintages that Bonneau considers finest enough, and comes almost entirely from the prized plateau of La Crau - the nearest thing to a Grand Cru in Châteauneuf du Pape. Here, a magical combination of factors provides the potential for the region's finest wines: the iconic 'galets roules' (cobble stones) store up the sun's warmth, promoting ripeness in the heat-loving Grenache grapes, while the clay soil underneath retains water for the vines, even at the height of summer. The higher elevation exposes the vines to the northerly Mistral wind, which confers both freshness and natural pest control.
